Cauliflower Recipe That Meat Eaters Will Love

This delicious side dish or appetizer caters to almost any audience because of its unique flavor and bite-size portions. It’s a little dish packed with big flavor that you can definitely impress with at your next get-together!

INGREDIENTS

1 Head of Cauliflower (preferably purple or orange)

1 Container of Whole Foods Smoked Gouda Dip

3/4 Cup Pine Nuts

3/4 Cup Coarsely Chopped Pepperoncini

16-18 Mint Leaves

Salt

Pepper

Olive Oil

INSTRUCTIONS

Preheat oven to 400 degrees F.

Wash and separate your cauliflower into bite-sized florets. Place into a large mixing bowl.

Chop the mint and pepperoncini. Place in bowl with gouda dip, pine nuts, salt, pepper, and olive oil. Mix all ingredients well then spread onto a foil-lined baking sheet.

Lightly spray with a touch more olive oil then place in oven for 35 minutes.

When done, transfer with a spatula into a serving bowl.

Garnish with a little more chopped fresh mint for color.

P.S. You can eyeball the pine nuts and pepperoncini and add more or less depending on the size of your head of cauliflower and your personal preference.
